Notes: Combine peas and water, soak over night. Add remaining ingredients except rice. Cover and simmer 1 1/2 hours. Chop ham and add rice, simmer until rice is tender (20 Minutes). Remove bay leaf. Serves 12
  • 1 lb. dried blackeyed peas
  • 8 cups water
  • 1 8oz. ham hock
  • 1 16oz.can tomatoes, cut up
  • 1 regular chopped onion
  • 1 cup chopped celery
  • 1 tbsp. salt
  • 2 tsp. chili powder
  • 1/4 tsp. basil
  • 1 bay leaf
  • 1 cup long grain rice
