Seafood - Southwest Tortilla Crusted Fish Print Version
Serves: 4
Notes: Great with any kind of fish available (mahi-mahi, talapia, salmon) Can even be used as a breader for Crab Cakes!
  • 2 Cups Ground Corn Tortilla (can use chip but fresh works best)
  • 4 Fish Fillets
  • 4 teaspoons lime juice
  • 2 egg whites
  • 1/2 cup chopped cilantro
  • 1/2 recipe BASIC MEXICAN FOOD FLAVOR SEASONING BLEND ( under Seasoning Blends and Rubs)
  • 2 teaspoons butter
  • 2 teaspoons extra virgin olive oil
Preheat oven to 450 degrees. Grind fresh tortillas in food processor or tortilla chips in a plastic bag. Add cilantro, lime juice, seasoning blend and mix. Put tortilla breading crumbs on a dish. Beat 2 egg whites in a bowl. Dip fish in egg then press in tortilla crumbs. In hot pan melt butter and oil. Brown both sides of the fish in pan. Transfer fish to cookie sheet and bake for another 5 minutes or until fish is done.
