Put all dry ingredients into large bowl. Mix in buttermilk, eggs, melted butter, vanilla and red food color. Lastly, add in vinegar and mix well. Heat pan or skillet over medium heat. If pan is non stick, it will need to be oiled or buttered. Scoop 1/4 cup batter and put in center of heated pan. Cook until edges begin to pull away and batter begins to bubble in the middle. Flip pancake and cook until second side is browned. Cover pancakes with Maple Cream Cheese Glaze. Chocolate chips can be added to batter or placed on top of the pancakes along with a light sprinkle of powdered sugar.
