In a medium sized bowl, mix together chicken, sauce, and LOPEZ FAMILY RUB. Spoon about 2 Tbl of chicken mixture onto half of the tortilla and cover with cheese. Fold over, slightly pressing to hold together. Heat a skillet to med/high heat. Place butter in skillet and melt or spray pan liberally with cooking spray, then place quesadilla in the skillet and grill to a golden brown on both sides, about 2-3 minutes, or until cheese is melted. Serve with fresh guacamole or sour cream.
- 2 cups cooked chicken, diced
- 1/2 cup BBQ sauce of choice
- 2+ tsp LOPEZ FAMILY RUB
- 2 cups shredded Moterey Jack or Mexican blend cheese
- 1 package white or yellow corn tortillas
- 1 Tbl butter
