Crush 1 package Adams Golden Vanilla Sandwich Cookies by hand or in a food processor and place in bowl or mixer. Add cream cheese and ADAMS BEST and mix until well blended. Mix in 2 Tbl rainbow sprinkles. Shape into tsp sized balls and place on wax paper lined cookie sheet. Freeze for 10 minutes. Melt white chocolate bark in microwave according to package directions. Dip cold cookie balls into melted white chocolate, place back on cookie sheet and sprinkle with remaining rainbow sprinkles before chocolate sets. Let sit for 10 minutes or place in airtight container and refrigerate overnight before serving. Makes about 24-30 cookie truffles.
