Pumpkin Bread

10 minutes / 70 minutes

Preheat oven to 350 degrees. Spray three 8x4-inch loaf pans with nonstick cooking spray. In a medium bowl combine the flour, nutmeg, cinnamon, ginger, baking soda and salt.  Stir with a whisk to combine. In a large bowl, combine the pumpkin, sugar and vanilla.  Whisk until well combined. Add the eggs, vegetable oil and water.  Whisk until well combined. Add the flour, a little at a time, stiring well after each addition.  Evenly distribute the batter between the three prepared loaf pans. Bake for 60-70 minutes until a knife inserted in the center comes out clean. Remove from the oven and cool in the pans for 5 minutes. Remove the bread from pans and allow to cool completely on a wire rack. Wrap loaves individually. Keeps well in the freezer for at least a month in a tightly sealed container.
