Cherry Crumble

Ingredients:
  • 2 pounds cherries, pitted
  • 1/3 cup sugar
  • 1/4 cup cornstarch
  • 1 juice of 1 lemon
  • 1/4 teaspoon ADAMS ALMOND EXTRACT
  • 1 cup flour
  • 1/2 cup packed brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon ADAMS GROUND CINNAMON
  • 1/4 teaspoon salt
  • 1/2 cup butter, cut into 1/2 inch cubes
  • 1/3 cup sliced almonds
Directions:
Preheat the oven to 375 degrees. Coat a 11x7 inch baking dish with cooking spray. In a mediium bowl, combne the cherries, sugar, cornstarch, lemon juice, Adams Almond Extract and a pinch of salt. Stir well to combine. Transfer the cherry mixture to the prepared baking dish. In a separate medium bowl, combine the flour, brown sugar, baking powder, Adams ground cinnamon, and salt. Stir with a whisk to combine. Add the butter to the flour mixture and using a pastry blender cut the butter into the flour mixture until coarse crumbs form. Stir in the almonds. Sprinkle the crumble mixture over the cherries.  Bake in the preheated oven for 55-60 minutes, or until the filling is bubbly and the top is golden brown in color. Allow to cool for 5 minutes before serving. Serve warm and top with vanilla ice cream, if desired.
